Coconut flour is the leftover of coconut milk making, dried and milled, and it is one of the highest-fibre flours you can buy. It is also the most demanding one in any kitchen, because it absorbs water like almost nothing else. Used correctly it is excellent. Used like wheat flour it will ruin whatever you are making, so this page spends more time on method than most.

What to know before you buy

  • It absorbs enormously more liquid than any other flour. As a rough rule, a quarter cup of coconut flour does the work of a full cup of wheat flour, and needs far more liquid
  • It has no gluten and does not bind, so baked goods need eggs or another binder
  • The fibre is the point. This is genuinely one of the highest-fibre flours available
  • It tastes of coconut, mildly but unmistakably. That is lovely in a bake and less so in a savoury roti

How to use it

The rule that matters. Never substitute coconut flour one to one for wheat. Start by replacing about a quarter of the flour by volume, and add extra liquid until the batter looks slightly too loose. Then wait five minutes. It will thicken on its own. Almost every coconut flour failure is someone adding more flour to a batter that was about to be perfect.

Frequently asked questions

Is coconut flour gluten free?

Coconut contains no gluten. Ours is milled in a facility that also handles wheat, so we would not call it suitable for coeliac disease.

Can I replace wheat flour with it one to one?

No, and this is the most important thing on the page. Coconut flour absorbs several times more liquid. Start at about a quarter of the flour by volume and increase the liquid substantially.

Does it taste strongly of coconut?

Mildly but noticeably. It suits bakes and coastal cooking. It is less suited to a plain savoury roti.

Is it good for a low-carb diet?

It is naturally lower in carbohydrate and much higher in fibre than grain flours, which is why it is common in low-carb cooking. Whether a low-carb diet suits you is a question for your doctor or dietitian.

Why does my batter keep thickening?

Because the flour is still absorbing. Mix it looser than looks right and wait five minutes before adjusting.
