Atta is the one thing in an Indian kitchen nobody thinks about until it is wrong. The rotis go dry, or they smell faintly of the packet, and everyone notices without quite saying so. This is our attempt at the boring version done properly. Whole wheat, stone-milled on a chakki after you place your order, with nothing taken out and nothing put in.

Milled fresh after you order

Supermarket atta is milled in bulk and then sits, sometimes for months. Ours does not exist until you order it.

Fine or coarse, and how to choose

  • Fine is the one most families want. It behaves like the atta you already buy, rolls thin and puffs easily. Choose fine if this is replacing your regular packet atta
  • Coarse is milled to a slightly rougher grind. It gives a more textured roti with more bite, and it holds up better in parathas and thick rotis. Choose coarse if you like a rustic roti or you are used to getting your atta ground at the local chakki

One dough tip. Freshly milled atta with all its bran drinks more water than aged packet atta. Add a little extra, and rest the dough 15 minutes before rolling. The bran needs that time to soften, and it is the difference between a stiff roti and a soft one.

Storage and shelf life

Frequently asked questions about Whole Wheat Atta

What does 100% whole wheat actually mean here?

The whole grain goes into the flour. The bran and germ are not separated out, which is what usually happens in commercial milling, where the bran is removed and sold separately.

Should I order fine or coarse?

Fine if you want it to behave like the atta you already buy. Coarse if you want a more textured, rustic roti closer to what a local chakki would give you.

How is this different from supermarket atta?

Two things. It is stone-milled rather than roller-milled, which runs cooler and keeps the germ intact. And it is milled after you order rather than months in advance, so it has not been sitting in a warehouse.

Why does my dough need more water than usual?

Because the bran is still in it and the flour is fresh. Add a little more water than you are used to and rest the dough 15 minutes.

Is this gluten free?

How long does it stay fresh?
